Here are some recipes that people have shown interest in:

 

Pie Crust (recipe from Emily's paternal Grandmother, Phyllis Grossman)

3 c flour

2 t salt

11/2 c crisco

1/3 c milk

 

Mix salt and flour.  Cut in crisco.  [Contact us if you don't know how to do this, and we'll give you instructions.]  Add milk and mix just until dough is moistened.  Divide into two equal balls and roll out on a pastry cloth.  Makes two 9" or 10" crusts or one 9"-10" bottom crust with a top crust.

 

Pumpkin Pie

Make crust as described above.  Preheat oven to 450.

 

1 can pumpkin (100% pure pumpkin)

1 c sugar (can be reduced to 1/2c or 3/4c if you want to limit sugar)

1T cornstarch

1/2t salt

2t cinnamon

1t ginger

1/2t nutmeg

1/2t cloves

2 eggs

1.5c milk

2T molasses

 

Mix dry ingredients with pumpkin.  Add remaining ingredients.  Mix thoroughly.  Pour into an unbaked 9" pie shell.  Bake in preheated oven at 450 for 10-15 minutes.  Reduce heat to 350 and continue baking for 50 minutes, or until the middle of the pie is just a little bit jiggly.

 

Rum Cake (very easy... Emily's Dad is an expert at this recipe)

1 package yellow cake mix (ignore preparation instructions on the box)

1 package vanilla instant pudding mix

1/2c OJ or water

1/2c oil

4 eggs

1/2c white rum

 

Mix everything together and beat for 3 minutes.  Pour into a greased and floured Bundt pan.  Bake 50-60 minutes at 350.  Start sauce when cake comes out of oven:

 

Sauce:

1c sugar

1 stick butter

1/4c OJ or water

1/4c white rum

 

Heat butter, sugar and OJ/water until sugar is melted.  Remove from heat and stir in rum.  Prick cake (still in pan) with a skewer or fork (the point here is to make little holes for the sauce to run into).  Pour syrup over cake and let it cool in the pan, then turn out onto a plate.

 

Pumpkin Bread (a Suzie Bird favorite):

1 can pumpkin (100% pumpkin)

3c sugar

1c water

1c oil

4 eggs

3 1/3c flour

2t baking soda

2.5t cinnamon

3/4t nutmeg

3/4t cloves

1t ginger

1t salt

1t baking powder

1/2t vanilla

 

Heat oven to 350.  Mix pumpkin, sugar, water, oil, vanilla and eggs.  Mix dry ingredients in separate bowl and slowly add to the pumpkin mix, stirring as you add.  Grease two 9x5" loaf pans and dust with flour.  Divide batter between the two pans and bake for 60-70 minutes.  Cool for 10-15 minutes and then turn out onto racks to cool completely.
