Main Courses:
- Grilled Pork Tenderloin
- Delicate tenderloin of pork marinated in a mixture of herbs and spices
lightly sweetened with a reduction of fresh raspberry. The pork is
thinly sliced and served with rhubarb-balsamic compote and confit of
shallot.
- Tuscany Grill
- Free-range boneless chicken breasts are rubbed with fresh herbs, lemon
zest, olive oil, and minced garlic and char-grilled to juicy perfection.
The chicken is then served with a fresh salsa of tomato and fragrant
basil or a tangy artichoke dressing.
